Balsamic Chicken

We had such a yummy dinner Saturday night! Even Jori ate most of it without complaint, which is a big deal! We started out the meal with mashed cauliflower flavored with margarine, garlic salt and lots of parmesan cheese (thanks to Trace DiCocco, we finally have Parmesan!). This was the part of the meal Jori was less than fond of, but the rest of us chowed down on. I only gave her a tiny scoop because I didn’t want to waste such a tasty treat on her picky palette.

Next, we had oven roasted potatoes. Darin cubed 5 or 6 potatoes, then we tossed them in a bowl with some olive oil, chopped garlic, onion, salt and pepper. When they were close to being done we topped them with shredded cheddar, parmesan and BACON!! They were pretty tasty, but I think we needed to add more oil as they were a bit dry.

Finally, we had Balsamic Chicken. My friend Amy B. from high school gave me this recipe a long while ago and this is the first time we made it. YUM! Here is the recipe:

Balsamic Chicken

6 chicken breasts, 1 T oil, 3 cloves garlic-minced, 1 cup chicken broth, ½ cup balsamic vinegar, 2 T honey, ½ tsp pepper, 3 scallions.

Heat oil. Sauté chicken 4 minutes each side and remove from pan. Add garlic. Stir around for 30 seconds then add the rest of the ingredients (we had these all mixed together in a bowl). Return chicken to pan. Reduce heat, cover and simmer for 25-30 minutes.

The chicken was so good. We all really liked it. It was super, super tender. The one thing we would have done differently is used flatter pieces of chicken so that the sauce soaked all the way through, but even still it was good. I think I would prefer it to be a little more salty or savory, but I am no good at tweaking recipes, so if someone else ever tries, let me know : )

We had tacos again last night and spaghetti carbonara a couple nights before that. I think that those two meals and this chicken will become regular items in our meal rotation.

Sounds yummy- going to have to try the chicken!! And mashed cauliflower, why mashed or did it come that way? Very interesting and also sounds really good!
